It’s a season where nature’s beauty truly shines, and what better way to revel in it than by indulging in the incredible wines of Oregon?


May is Oregon Wine Month, and in celebration we’re unveiling something truly special: wine flights! We’re thrilled to announce not one, but two flight options, a Pinot Noir flight and a White/Rosé Flight, featuring a curated selection of our local favorites. Nestled in the heart of Oregon, Willamette Valley is a haven for wine lovers. Blessed with fertile soil, a mild climate, and rolling hills perfectly suited for vineyards, this region has rightfully earned its place among the world’s top wine-producing areas. Here, winemakers embrace sustainable practices, nurturing wines that beautifully reflect the terroir. With its stunning vistas, quaint vineyards, and family-owned wineries dotting the landscape, the Willamette Valley invites us to explore its diverse range of varietals and discover the captivating world of Oregon wine.

Cooper Mountain Pinot Gris


Setting the stage for our flight is the crisp Cooper Mountain Pinot Gris, a standout wine from one of Oregon’s oldest wineries, located in the scenic hillside in Beaverton since 1978. At Cooper Mountain, sustainability isn’t just a buzzword—it’s a way of life. Through their commitment to organic and biodynamic farming methods, they’ve not only crafted exceptional wines but also nurtured the land for generations to come.


This latest batch of Pinot Gris bursts with flavors of mixed citrus and pear, light crisp body, accompanied by hints of herbs and a touch of minerality from the unique volcanic soil of the region. Renowned as one of the top Pinot Gris wines in Oregon, Cooper Mountain’s commitment to quality shines through in every sip.


At Cooper Mountain Vineyards, they’re all about making wine the natural way. That means using compost and following a lunar planting calendar. This approach, called biodynamic farming, helps them work in harmony with nature, producing wines that truly reflect the land. Founded by Dr. Robert Gross and his wife Corrine, Cooper Mountain’s family-run operation spans 200 acres across seven vineyards. Today, led by Bob and daughter Barbara Gross, they continue their legacy of sustainable winemaking, crafting bottles that are a true labor of love for the earth.


Pair this Pinot Gris with our Linguini Misto Mare for a perfect match. The wine’s citrus and pear notes complement the seafood flavors, while its acidity cuts through the richness of the buttery sauce, creating a delicious balance.


Pike Road Chardonnay


Next on your flight journey, get ready to soar with our Pike Road Chardonnay. Crafted by Pike Road Wines, deeply rooted in sustainable farming and supporting family-owned vineyards across Oregon’s Northern Willamette Valley. With decades of winemaking expertise, Pike Road upholds the legacy of family farms with every bottle. Head winemaker Heather Perkin, bringing extensive experience from Australia, collaborates with Adam Campbell of the esteemed Elk Cove Vineyards, ensuring each sip embodies Oregon’s winemaking excellence.


This Chardonnay offers tropical pineapple and guava flavors, complemented by subtle citrus undertones and a delicate touch of oak, resulting in a luscious blend of fruit with a creamy texture and bright finish. Oregon’s cool climate and diverse soil contribute to vibrant acidity, ripe fruit flavors, and subtle minerality. The longer growing season allows for slow ripening, enhancing the wine’s delicious flavors. Many Oregon winemakers prefer a more natural style, minimizing oak influence to highlight the pure fruit and unique characteristics of the region.


Pair Pike Road Chardonnay with light, buttery, or creamy pastas like Linguini Shrimp Scampi or Fettuccini Alfredo, where its fruity and slightly oaky flavors beautifully complement the rich taste of seafood or cream sauces.


Shallow Seas Rose


Our final stop on this taste adventure is the delightful Shallow Seas Rosé, a true gem crafted by Real Nice Winemakers. Born out of a desire to meet sommeliers’ demand for high-quality yet affordable wines, this rosé embodies elegance and sophistication. Sourced from Oregon’s prestigious Hyland Vineyard, renowned for its organic and biodynamic practices, each sip reflects the exceptional quality of the grapes. Established in 1972, Hyland is among the region’s oldest vineyards.


The wine’s name and label honor the region’s marine sedimentary soils, remnants of an ancient inland sea. Fossilized sea shells and marine life were found in the vineyards, reflecting the area’s geological past.


Shallow Seas Rosé tantalizes the senses with fresh, lively aromas of cranberry and strawberry, leading to a dry, refreshing finish. Its bright acidity and fruity notes make it a versatile and food-friendly option, perfect for those seeking a vibrant wine with balanced acidity.


Pair this enjoyable rosé with dishes like our Caprese or Grilled Asparagus Salad for a refreshing combination that enhances its fruity profile.
