Behind the Scenes: Making Marinara

At Pastini, each meal is important and we do our best to make every dish perfect. To us that means making all our delicious sauces, dressings and soups and desserts from scratch. Yep. All of them. Right there, in each of our restaurants.

Why?

Because we know that using fresh, local ingredients makes a difference to our customers and to our community. We use fresh, sustainably-sourced produce, dairy, artisan breads, meats and coffee whenever possible. We know doing this makes you feel good about the food you eat and it gives us an opportunity to support our community members.

Here’s a peek behind the scenes so you can see how it’s done!

Several times each week our chefs sauté garlic and onions, add organic herbs and ripe tomatoes, and slow-simmer our savory bolognese and marinara sauces. The same goes for our scratch-made soups and salad dressings… always made in house, from fresh ingredients.

Chopping parsley

Diced roma tomatoes

Plenty of organic basil

Extra virgin olive oil to sauté the onions and garlic

Once sautéed, fresh tomatoes are added to the stockpot

Right at the end, the herbs are added

Fresh marinara is piled high on dishes like our classic Spaghetti and Meatballs
