Welcome Spring with our Smoked Salmon Ravioli

We’re bringing in springtime a little early this year with wild Chinook salmon and bright flavors! Introducing our Smoked Salmon Ravioli with Parmesan-Lemon Sauce and Tomato-Caper Relish. This spring pasta special pairs dill-infused smoked salmon ravioli with a lemony cream sauce and tomato-caper relish with plenty of fresh herbs. This dish has us feeling like we’ve finally turned the corner into spring!
The ravioli are sourced from our good friends at Classic Foods right here in Portland, who use only cage-free eggs, semolina flour, and filtered water to make their custom pastas. They took the same care with these delicious ravioli, infusing the dough with fresh dill and stuffing them with wild Chinook salmon and ricotta.

This dish is perfect paired with Chardonnay. Try it with Chehalem’s Inox Unoaked Chardonnay – the crisp, fruit-rich style, like an orchard of fresh fruit in a glass, is the perfect accompaniment to the tangy flavors in this dish. You’ll find Chehalem Winery just down the road in Newberg, OR.
