Rite of Spring



Like Oregon, much of Italy endures rainy winters…so spring, or primavera in Italian, is eagerly anticipated.  They even have a pasta named after it, Pasta Primavera.  It’s full of fresh spring vegetables, and is a light yet satisfying meal.  Pastini’s version uses capellini pasta along with spring peas, zucchini, roasted red peppers, mushrooms, broccolini and fresh basil.  Try it on your next visit…we think you’ll love it!
