All the sunny weather we’ve been enjoying has got us thinking about summer here at Pastini… especially as we’ve been experimenting with recipes for our summer seasonal specials. Fresh tomatoes have been a theme in the kitchen, as well as classic garden veggies. And, we’ve been grilling and roasting the veggies for extra flavor. The dish… Fettuccini with Fire Roasted Tomatoes and Shrimp.
You’ll love the combination of roasted tomatoes, grilled corn, yellow peppers and zucchini, along with sweet shrimp, oregano and zippy Mama Lil’s Peppers. This pasta just sums up summer.
And what’s summer without a gorgeous salad? Our Heirloom Tomato-Green Bean Salad pairs colorful cherry tomatoes with garden-fresh greens, gorgonzola, walnuts, crunchy roasted chickpeas (love these!) and piquant rosemary-balsamic dressing.
Summer special cocktail? You bet. All season we’ll be serving my favorite, freshly made Mojitos, with muddled organic mint, rum, fresh lime and a splash of soda. See you on the patio!
